YEAY FOR MY FIRST FOOD POST!


French Macaron Recipe Ingredients
4 large egg whites= 140g
1/3 cup or caster sugar 

1 1/2 cups or 230g pure icing sugar
1 cup or 120g almond meal
PINCH OF SALT
food colouring (optional)




Macaron Recipe Directions
Preheat the oven to 180 degrees C
Line your trays
(I use my seasoning bottles to make the cirles)



Sift the almond meal and icing sugar and salt.






Place egg whites and cater sugar in a bowl and mix with electric mixer until stiff enough to turn the bowl upside down without it falling out. Add gel or powdered food colouring and continue to mix. Fold into the egg white mixture. It should take roughly 30-50 folds using a rubber spatula.  The mixture should be smooth and a very viscous, not runny. Over-mix and your macarons will be flat and have no foot, under mix and they will not be smooth on top.


Pipe your macarons.

Place your macarons in the oven and decrease the heat to 150c. Bake for 8-10 mins.

USE WHATEVER FILLING YOU LIKE~
TIPS!!!
PREPARATION IS KEY.
·    Line your trays before hand.
·    “Bake” your almonds for 8-10 mins (or just until you start to smell them) in 150c before hand.
LESS IS MORE
·    DO NOT go cray cray on the food colouring. More liquid means less chances of getting smooth shells.
·    DO NOT over-mix! When folding egg whites and almonds, take a part of the mixture with a spoon and plop it back to the bowl. If mixture holds a peak, keep mixing. If mixture slowly spreads out, STOP ITS PERFECT!
GET PHYSICAL!
·    Rap your piped macarons 4 times rotating after each bang to release air pockets.
BE PATIENT
·    Let your piped macarons chillax for 30 mins to 1 hr and 30 mins or until u see less shine and a skin. I live in a humid country so I let them chillax in front of an electric fan for 1 hr and 30 mins.
·    DO NOT go ripping off your macarons right after baking. Let them cool and then rip them off.
